Angel Hair Salad
In the early 90s, I used to go to a restaurant called George Martin in Rockville Centre on Long Island– they had the best food. One of my favorites was the Angel Hair Caesar Salad. This was inspired by that dish, without the fuss of making your own Caesar dressing.
Ingredients
- For the Salad
- 1 package whole grain angel hair pasta
- 1 bunch mixed greens
- 1 can black olives drained and chopped (I really like the Lindsay naturals)
- 1 jar small capers, drained
- 2 cucumbers peeled and chopped
- 4 plum tomatoes chopped

- For the Dressing
- 1 part balsamic vinegar
- 1 part extra virgin olive oil
- 1 clove garlic chopped fine
- about a tablespoon of mild mustard to help it combine
Instructions
Cook the pasta according to package directions then cool with cold water (I put a bowl under the colander, with some ice in it and run cold water over it. Change the water until pasta is cooled nicely – toss in a little olive oil if it’s going to sit awhile to avoid sticking. Combine in a large container with a lid.
For the dressing:
Place all dressing ingredients in a jar with a sealed lid and shake till combined.
Pour the dressing over the salad and toss gently to combine.
Plate and grate a little Locatelli and some black pepper to finish it.
Crunchy, salty, briny, really satisfying. Best of all? Super easy.
