Broccoli Cheddar Soup
Cheesy Goodness this Broccoli and Cheddar Soup will warm you right up!
Ingredients
- 2 Tablespoons Butter
- 1 Diced Onion
- 3 Cloves Garlic, Minced
- 2 Cups Vegetable Stock
- 1 Cup Heavy Cream
- Lots of Fresh Broccoli, Chopped
- 3 Cups Cheddar Cheese
- Salt and Cracked Pepper to Taste
- 1/2 Teaspoon Xanthan Gum (optional)
Instructions
- Melt butter in pot
- Add onion, a good amount of salt and sauté until translucent, or caramelized if you prefer
- Add garlic and sauté until very fragrant
- Add vegetable stock and bring to a boil
- Add broccoli and cook until tender crisp
- Add cream and stir
- Add cheese in small handfuls letting it melt between additions
- If desired, add Xanthan gum, 1/4 tsp. at a time and whisk to ensure it doesn’t clump
- Taste and adjust salt if necessary, add a lot of fresh cracked black pepper
