Ingredients
- Small red onion, sliced thin
- Iceberg Lettuce, sliced
- Cucumber sliced thin
- Store bought, prepared chicken salad
- Store bought, prepared fruit salad
- Olive oil
- Red wine vinegar
- Walnuts, chopped
Instructions
- Slice the onion very thin, put in an airtight container and cover with red wine vinegar. Let sit 30 minutes, at least to make a quick pickled onion
- Put the lettuce and cucumber in the serving bowls and drizzle with olive oil
- Top with quick pickled onion
- Scatter fruit along the edge of the bowl
- Scoop chicken salad Into the center of the fruit
- Top with chopped walnuts
- Salt and pepper to taste
