Kombat Krab Salad
My son loves a good mayo based macaroni salad. Add a little fish and he’ll follow you anywhere. We were talking about the use of a “k” in Krab and how it meant that it wasn’t real crab meat, but haddock or cod, and he remarked how it was like the video game, “Mortal Kombat”. Somehow it stuck and this is now Kombat Krab Salad.
Ingredients
- 2 boxes corkscrew pasta
- 10 stalks of celery chopped
- 1 pint of grape tomatoes halved
- 1 onion chopped
- 2 14 oz packages of crab like stuff. Sometimes it’s called
- Krab, sometimes classic crab. You could certainly use real crab, but I’m not going to spend all that money and cover it with mayo. Cut or pulled into bite size pieces
- 1.5 cups good mayo
- 1.5 cups sour cream
- 2-3 tablespoon white balsamic vinegar
- 4 tablespoons chipotle Tabasco or to taste – we wound up
- using much more than that but we like the heat.
- big pinch of sea salt (to taste)
- couple of grinds of white pepper (to taste)
- 1 bunch fresh parsley chopped
Instructions
Put up a large pot of water to boil. Salt it generously and cook pasta according to package directions. I like to under cook it just slightly because it will be sitting in a dressing and we don’t want it to get too mushy.
Put the celery, tomato, onion, and fish in a large sealable container.
In a large bowl (I like use something with a spout – like my enormous measuring cup), add everything from the mayo to the pepper. Whisk well and pour over the salad.
Toss with tongs, to coat. If you need more dressing, go ahead and make some more, just equal parts of mayo and sour cream and everything else to taste. Before you make more though, really try to be patient about tossing the salad, sometimes there’s more dressing than you think.
When everything is thoroughly combined, add the parsley. Chill for about an hour before serving.
Notes
Serves a lot of people. You could absolutely halve, quarter, double, whatever you need. Great pot luck dish.
