WATERMELON, ARUGULA AND FETA SALAD
Nothing says summer to me more than watermelon... well, corn on the cob too, but that’s later in the summer. I thought I’d make a quick salad to go along with all the grilling that we were doing. There were beautiful, round, seedless watermelons at the supermarket, so that’s what I used.
Ingredients
- 1 seedless watermelon, rind removed and chunked into bite size pieces
- 1 bunch arugula
- 6 oz. feta cheese (I like to buy it whole and chunk it
- myself)
- 2/3 cup extra virgin olive oil
- 2/3 cup white balsamic vinegar
- Mediterranean sea salt (or kosher)
- freshly ground black pepper
- 1/2 large red onion, very thinly sliced
Instructions
Add the watermelon, red onion, arugula and crumbled feta to a large, container with a cover so that you can leave this out or transport it later.
In a mixing bowl combine the oil, vinegar a couple of grinds of black pepper and a big pinch of salt and whisk to combine.
Pour over the salad and gently toss. Refrigerate until chilled.
Notes
This is not a make a head salad. If you let it sit too long the watermelon releases even more juice and then it will get soggy. A couple of hours are ok, but any more than that isn’t going to work.
The bite of the arugula and the pepper balances against the salt and the sweetness of the vinegar and the melon.
