AVOCADO CREAM CHEESE
A party favorite that always reminds me of Super Bowl, I make scallion cream cheese quite often, which is so simple you can’t believe it. It’s wonderful on crackers, bagels, smeared on a celery stalk but especially rolled up in thin sliced ham, salami or pepperoni.
Ingredients
- 4 packages cream cheese softened
- 1 bunch scallions
- bunch of scallion, trimmed and chopped
- 2 avocados
- salt
- juice of half a lemon
Instructions
Combine two packages of cream cheese and scallion I use my stand mixer, but you could use a hand mixer, or even a food processor. Blend the ingredients together on low speed until fully combined.
This particular day I also had two avocados that needed to be used and my husband made this one...
Combine the avocado, one package of cream cheese, lemon juice and salt in the bowl of your mixer and mix on low until combined.
Notes
I was shocked at how good this was and it makes a great spread for sandwiches, crudités, anything really. Bright and salty, but mild and creamy. Just delicious.
It’s also a great jumping off place for other recipes. I think it would be great to add some sour cream, diced hot pepper (serrano or jalapeño) and use it as a dip, or a topping for taco salad, or to dollop onto a big bowl of chili.
